    An unfiltered hop forward Pale Ale that flirts with the idea of being an IPA.

    More malt and the addition of oats provides this beer with a juicy mouth feel that gives the hops a platform to shine.

  • sun eater wcipa (february 2024)

    A west coast with a tropical passionfruit driven twist, brewed for summer and the the current HBC brewer knockoff of choice.

    Sun Eater is a seriously yummy West Coast IPA with all the bitterness you want plus a fun amount of hoppy fruitiness. We’re talkin’ a hop bill of Simcoe, US Cascade, Crystal & Centennial and a bright easy malt bill that will remind you of warmer days.

  • bonorong marsupi-ale (december 2023)

    A refreshing Australian style Pale Ale, brewed with Bonorong Wildlife Sanctuary, featuring all Tasmanian Hops.

    50% of all profits from this beer go directly to the Bonorong critical care and rehab teams, providing care for injured and orphaned wildlife.

    The mandarin character of the Tasmanian grown eclipse hops shines in this super crushable summer Aussie pale, balanced by a gentle morish bittnerness.

  • half cut - guava & blood orange sour (december 2023)

    A refreshing sour beer bursting with tropical guava and juicy blood orange.

    This beer has been traditionally kettle soured for a soft morish acidity, then punch up to the next level through the tropical tartness of guava. Huge blood orange additions add juicy complexity and a morish citrus peel bittnerness without overpouring the base flavour of the beer.

  • it's just a haze iipa (november 2023)

    For our big 9th birthday we brewed a big hazy beer! This double hazy IIPA is as juicy as it gets with a friendly mash hop addition and massive dry hop character.

    Tropical, thick and juicy,with a slight fruity sweetness and all the weight you could ever ask for.

    Hops: Galaxy, Idaho 7 and Amarillo.

  • colorado ipa (october 2023)

    The original HBC IPA. Colorado is an old school mountain style IPA with huge US hop additions and a robust bitterness that’ll strip the enamel from your teeth. Layer upon layer of toasted malt adds a subtle caramel base for the hops to spring from.

    Originally brewed for our 2nd birthday it’s been gone for a little bit…. but now it’s BACK BABY!

  • hb lager (september 2023)

    For Thirst. Hard earned, or not.

    Last year our Helles Lager won gold at the Aus Independent Beer Awards, crowning it the crispiest of Indie Tassie Lagers, so you know we had to brew it again..... with a few branding tweaks.

    Rearing it's head just as Tassie rediscovers the sun.

  • wavelength pilsner (september 2023)

    A collab with Australia’s largest hop grower (HPA) showcasing liquid hop products.

    A West Coast Style Pilsner with a firm but clean bitterness from the use of FLEX, dry hopped with both Citra Spectrum and Vic Secret Spectrum.

    4.8% abv

    Hops: Mardarina Bavaria, FLEX, Citra Spectrum and Vic Secret Spectrum.

  • sesh coast wcipa (september 2023)

    All the dank west coast hop character you cave, with a restrained abv. Sesh Coast.

    We love big IPAs. But we also have lives to live, you know? As spring started rolling down the hill we threw this super sessionable hoppy westy into the tanks to give us a taste of what summer will feel like.

  • tiramisu stout (august 2023)

    An indulgent stout inspired by the Italian dessert. Driven by freshly roasted coffee and layers of biscuit, cream, vanilla and dark roasted malt.

    This ain’t no modern sweet pastry stout. This is well made coffee stout made complex through the addition of dessert.

  • bingo! red ipa (june 2023)

    Made Red through SCIENCE and Red X and Cara-Amber Malts, Bingo! is an IPA brewed for the depths of winter. A comforting malty, biscuity base with American and Australian hops providing a morish bitterness.

  • nine nails imperial stout (june 2023)

    Layer upon layer of malted barley builds a surprisingly complex and textured stout with hints of biscuit, roasted coffee and dark chocolate. We added a small amount of Scottish peated malt to the grist which adds a super balanced smokiness as well as extra layers of savory texture.

  • blood & sand - blood orange and maidenii vermouth sour (may 2023)

    Blood and Sand is an aperitif inspired sour brewed for winter drinking. Traditionally kettle soured with huge blood orange and vermouth additions makes for a complex but oh so sessionable sour with an addictive acidity and intriguing botanical complexity.

    There’s a chill on the air and it tastes like Tascadian.

    A melting pot of dark decadent roasted malt and assertive hops, brewed annually and drunk quickly.

  • ricerahops - new world japanese style rice lager (march 2023)

    HBC’s new world Japanese style rice lager. A 30% rice mash bill and classic lager cold ferment creates the crispiest, lightest bodied lager you could possibly ask for. Add a generous helping of Japanese Sorachi Ace hops and you've got a thirst quenching new world pilsner level of bitterness paired with a unique lemony citrus kick.

    Drink sensibly and keep away from dinosaurs.

  • back to basics fresh hop ipa (march 2023)

    2023 is the year of Eclipse. For the next evolution of our Fresh Hop IPA we brewed a no fuss classic with a morish dry finish that’s all about letting the hop character sing.

    Back to Basics boasts over 70kg of Eclipse used throughout the brew, showcasing the hop’s mandarin and citrus peel character.

  • wheel snipe celly wcipa - young henry's collab (march 2023)

    Brewed in Newtown, launched in Hobart. Our brewer Alec made the long and dangerous trip up north and jumped on the brew kit with the Young Henrys crew. The result? A huge flavourful West Coast IPA featuring nothing but Australian hops. Dangerously drinkable stuff!

  • naipa hazy ipa (feb 2023)

    This is our evolving IPA, brewed annually to celebrate our Head Brewer Scott's new found citizenship. Always unfiltered with a focus on hop flavour.

    This years hop bill of Topaz, Galaxy, Eclipse and Tasmanian Cascade combine to make a juicy and crushable hazy NAIPA.

  • everything's a hammer wcipa (february 2023)

    Everything's A Hammer WCIPA. 7.2%abv of piney old school goodness, with an all American bitterness that'll strike you across the face and let you know your alive.

    Why the name? Lets just say when you’re in the brewery trenches making good beer that sometimes you’ve got to get a little inventive…

    Keg only, pouring in the taproom and select venues. Get percussive.

  • mando - mandarin kettle sour (january 2023)

    We’ve been dipping our toes in the sour pond quite often this year, but with an extra day up the ol’ sleeve it was finally time to go old school and do a kettle sour.

    Enter Mando. Bright juicy and refreshing, bursting with Mandarin flavour. Lightly sour but with an incredibly moreish residual fruit sweetness. Brewed for the hot day you deserve.

  • trail haze pale (december 2022)

    We're celebrating the end of '22 by dry hopping a smashable 5% pale until it's as hazy as the heat rising off our big red metal shed. Trail Haze Pale.

    Launched at the Taste of Summer Festival before finding its way to bars all over Tas.

    Huge flavour, gorgeous texture, but at an incredibly sessionable 5%. It ain't the weather for 12% IPAs....

  • tyenna river gose - mixed berry sour (december 2022)

    The Tyenna River winds through untouched National Parks before kissing the glorious Westerway Berry Farm. It then meets up with the Derwent right in the middle of hop growing country where it waters the hops we use year round.

    Tyenna River Gose is an incredibly refrshing lightly salted sour that burst with blueberries, strawberries, raspberries and blackberries. All fed by the Tyenna.

  • little bo pils - czech pilsner (december 2022)

    Czech grown floor malted pilsner malt. Noble Hallertau Trad hops. Cold conditioned to perfection. This is as close you’ll get to Prague without leaving the pub.

    Traditional Czech style pilsner. Approachable and crisp with layered hop bitterness on the back end that’ll make you beg for another sip. Brewed to be drunk in beer gardens and beer halls alike.

  • stacks on stacks on stacks - blueberry pancake imperial sour (november 2022)

    Yeah okay so we got a little silly and ducked into the baking section of the brewery. Stacks on Stacks on Stacks is the result. It's a big, sour, fruity beast that pairs surprisingly well with whipped cream.

    Dangerously drinkable and stuffed full of Tassie fruit, lactose and memories of breakfast past, you can find it pouring in the HBC Taproom now. Limited kegs will be finding their way into pubs and questionable breakfast joints throughout November.

  • rocky mountain high iipa (october 2022)

    Unfiltered and untamed, Rocky Mountain High IIPA. Where Coast meets West Coast, citrus meets pine and righteous bitterness is balanced by plentiful malt.

    This style of beer is nostalgic for us. A Coloradan classic that’ll strip the enamel from your teeth and leave you asking for more. Our first ever IPA was Mountain IPA style ‘Colorado’. Rocky Mountain High is the spiritual successor. Big, bold, and tastes like home.

  • iron pot rye porter (2017 - 2022)

    A beer that drinks above its weight, our previously year round dark ale is robust and balanced without heavy alcohol. The use of rye creates a biscuity undertone that leaves it sitting between a porter and a stout; with the velvety smoothness of one but less "roastiness" of the other.

  • can i dip it? hazy ipa (october 2022)

    A sensible modern Hazy IPA with an irrational amount of hops. This is the first beer we’ve made that’s used a technique known as ‘dip hopping’ to infuse even more hop character when the beer is knocking out of the kettle. An experiment gone right.

    Huge juicy hop character and geougous weight on the palate - balanced by a subtle but not shy bitterness.

  • half-cut mango & passionfruit sour (september 2022)

    What do you get with you cram a fermenter with 210kg of Mango, 105kg of Passionfruit and a rockin' bright sour bass?

    You get Half-Cut.

    An incredibly fruit forward sour, built upon a clean sour base. High acidity balanced by huge flavour and weight from massive fruit additions.

  • chocolate rain - choc raspberry nitro porter (september 2022)

    An incredibly limited taproom only release.

    A Nitro version of our classic Rye Porter with post-ferment additions of Tasmanian Raspberry, Cacao Nibs and decadent chocolate. It’s rich and creamy but surprisingly balanced thanks to natural fruit acidity.

  • standard ale (core range 2020 - 2022)

    A full bodied German style Altbier with a rich, copper colour, boasting German noble hops & biscuity roasted malts.

    The result is a great balanced beer with full flavour but less alcohol – so you can enjoy it for longer. Mid-strength beer doesn’t have to be boring. Raise the Standard.

    Our Helles Lager is an incredibly drinkable traditional style lager, inspired by German brewing tradition.

    60 days in tank, cold conditioned, noble German hops, and immeasurably crisp. Described by those in the know as "Tastes like you're having a second one".

    The only Tasmanian Lager to win gold at the 2022 Australian Independent Beer Awards (Indies).

    Our 2016 ‘Batch 50 IPA' was a beer that pushed boundaries. Full cone hops, hop pellets and hop pastes built new layers of flavour during every stage of brewing. The result was a monstrous Imperial IPA. What we didn't tell you at the time was we set some aside....

    Brewed like an IPA, double pot distilled, aged in oak, and bottled at natural cask strength. A collision of hops, malt, spirit and oak. A Tasmanian dram like no other.

  • bluey red ipa (august 2022)

    A big ol' day needs a big red knockoff and the best red knockoff is BLUEY (Red IPA).

    Seen in it's natural habitat here, being sipped upon by our Head Brewer and Co-Founder Scott, our new tap only Red IPA is going down pretty dang well. A healthy smattering of hops bring the party. Beer made red with Red X and Cara-Amber malts.

    From a brewery called Boston, in a town called Denmark, in Western Australia, after spending an ungodly amount of hours driving slowly across the entire breadth of Australia, Luke Lowe (our newest brewer) has arrived at Hobart Brewing Co.

    Lowe Down WCIPA. From the West Coast to HBC. Simcoe, Idaho 7 and Sabro bring a dangerously sessionable mix of juice, coconut and resin. Luke brings the smiles. Parental discretion is advised

    Inspired by Cascadia, molded by Tasmania. It's Tascadian weather out there folks, stay warm the old fashioned way.

    Assertive bitterness from Tasmanian Cascade and American Simcoe and Amarillo hops balanced by malt driven dark chocolate and caramel.

    Tall, Dark and Hoppy. The quintessential Tasmanian winter beverage.

  • naipa hazy ipa (march 2022)

    More haze than the Bridgewater Jerry.

    New Australian IPA, fresh from winning gold at the Indie Beer Awards, is now sporting a tin as fancy as 1920s bikkies.

    All Aussie hop bill of Topaz, Galaxy, Cascade and Eclipse delivers a tropical fruit punch to the palate with a firm balancing bitterness that begs you to take another sip.

    At 6.4%abv and with some serious weight on the palate this is no normal pint of breakfast juice. A higher IBU of 55 makes this beer stand firmly as an IPA.

  • eisbock

    The legend of the Eisbock started in the late 1800’s when an apprentice brewer in a small German town left a few barrels of bock-style beer out in the winter elements. The cold of the night froze the beer, and when the barrels were emptied the next day Eisbock emerged.

    HBC's Eisbock is a modern take on this traditional style. We freeze-distil our own Smoked Apple Bock, concentrating both alcohol and flavour. The result is an intensely rich and malty 16% beer, low on carbonation, with a luxurious texture.

    Thick and decadent with rich roasted malts, apple, and balanced smoke. Bottles big enough to share (or not).

    In the taproom fridge. Available for drink in and take away.

  • back to basics fresh hop ipa (march 2022)

    This year the kind folks at HPA gave us access to a bounty of freshly picked Galaxy hops. We did what came naturally and let the hop character sing with this extremely sessionable classic Single Hop IPA.

    Fresh Hops go a little easier on the bitterness than their pellet counterparts so this beer is all about letting the classic Galaxy Hop tropical fruit character do it’s thing.

  • blackberry sour (february 2022)

    HBC Blackberry Sour. Crafted for the summer you deserve.

    We started this beer with a classic clean gosé base of Traditional Ale Malt and Wheat Malt. 200kg of Tasmanian Westerway Farm Blackberries were then added to the tank during fermentation (that’s almost 100g per Litre!) and left to steep for weeks. The colour and flavour change was immediate and only grew in intensity and complexity over time, leading to a gorgeous rich ruby colour and a vibrant zingy palate. This beer stays true to it’s Gosé roots, balanced with a kiss of Tasman sea salt for a refreshing touch of salinity on the finish.

  • little pine (December 2021)

    There’s a place between heavy and light, north and south, east and west. Little Pine. A session hazy IPA that balances full juicy hop character with a restrained abv of 3.5%.

    Named for Little Pine Lagoon, the little body of water that sits in Tassie’s center.

  • peaches & cream (december 2021)

    The sun's been beating down and sour season is finally upon us. To celebrate we made you Peaches and Cream.

    Lifted and vibrant Peach flavour and aroma comes from the buckets and buckets of peaches thrown enthusiastically into the tank by our fruity brewers.

    Refreshingly dry and sour this juice sits at a sensible 4%. The slight haze and gorgeous weight on the pallet comes from a small lactose addition.

  • less is more wcipa (november 2021)

    Sometimes less is more.

    As the old saying goes… “When the fine hop growing folk at Hop Products Australia give you LUPOMAX hop pellets, make West Coast IPA.”

    This beer is all about hop flavour. A firm bitterness and a balanced bright malt profile make all of that 100% LUPOMAX Citra, Mosaic and El Dorado resinous goodness absolutely SING.

  • colorado ipa

    Colorado IPA, our first IPA, was brewed to celebrate HBC’s second anniversary. We wanted to brew a big, hoppy IPA that stood out from the rest and being an anniversary beer, Colorado was meant to be a one off brew. It went well… very well. So well we decided to continue brewing Colorado as a limited release every year.

    A hop driven beast with flavour as big as the Rocky Mountains, where East meets West. Loaded with American hops it tips the scales at a heavyweight 7.1% and a calculated 100 IBU, but oh so balanced with malt and bitterness. Unfiltered to allow piney and citrusy hop flavours to shine, with the firm bitterness of a West Coast. What IPA should be.

  • the belgian bushman strong ale (july 2021)

    Over the winter times our friends from Wayward Brewing came down to visit. What do we brew? Another frickin’ IPA??? Nah… Lets go for something funky, something different.

    The Belgian Bushman is a Belgian-style Strong Ale spiced with Tasmania Pepperberry, Lemon Myrtle and Bitter Orange Peel. We’re talking heaps of lifted fruit esters and spicey phenolics, driven by a classic Belgian yeast strain, making for a modern twist on a very traditional style beer.

    Light additions of Pepperberry and Lemon Myrtle twist very gently onto the palate. Funky enough to be interesting but keeping the integrity of the style intact.

  • jam on toast (june 2021)

    The breakfast of champions, brought to you by a couple of locals.

    Jam on Toast is a collaboration brew from HBC and Cascade Brewery. A beer that joins the world of commercial and craft. A tasty collision of big and small beer. A Schwarzbier that highlights the freshness of the raspberry with the subtle roast character from the malt. Two worlds combined.

    We’re talking about a toasty dark lager with all the malty goodness you love with a refreshing punch of fresh raspberry and an uplifting acidity that leaves you wanting more.

    This juice is seriously limited so get on it whilst it lasts!

  • choc-hazelnut imperial porter (june 2021)

    Rich but balanced, we hand-ground and steeped hazelnuts from Crooked Tree Farm in Cygnet, along with organic cocoa nibs, to create a luscious imperial porter with seductive maltiness and an incredible mouth feel.

    A silky Imperial Porter that we've put in a big can so it can be shared (or not) throughout the depths of winter.

  • strawberrry smash salted saison (may 2021)

    HBC X TOM MCHUGOS COLLABORATION

    This beer is a story of a collaboration between a grower, a chef and a brewer. A beer almost 2 years in the making. A single malt and single hop Saison, racked over fresh strawberries, inoculated with wild yeast Brettanomyces Bruxellensis, and aged in ex-wine casks for over 18 months. The result is astounding.

    Available only at Tom McHugos and in the HBC Taproom.

  • harvest fresh hop pale ale (march 2021)

    Once a year the hop harvest provides brewer's with a rare opportunity to showcase a different side of hops by being able to brew a beer with "green hops". That is, the hops are less concentrated in flavour and aroma than the hop pellets we normally brew with, so it takes more of them to achieve those characteristics we are looking for in our beer. Green hops also provide a distinctly fresh, vibrant and more grassy flavour profile with a softer bitterness. And because they are fresh picked and contain nearly 80% water, we brew with the green hops within 24 hours to maximise their freshness. This year we brewed a classic Australian Style Pale.

  • dream ale (february 2021)

    Starting with our recipe for our most approachable and easy drinking beer, Cream Ale, we added heaps of oats and hops with a touch of lactose to transform our Cream Ale into a Dream Ale; a hopped up DDH Oat Cream Ale, a trend at the moment where brewers use copious amounts of oats and lactose to create juicy smooth IPAs. Not wanting to turn our Cream Ale into a full-on IPA, our DDH Dream Ale focuses on the hops, Cascade and Vic Secret, along with a creamy and juicy mouthfeel to support all the hoppy goodness Dream Ale has to offer at just 4.5% abv. Who says you can't teach old dogs new tricks?
